Potato Soup - Yummmm!

This is Mom's quick potato soup recipe.  She peeled the potatoes but....I don't.  We like all the added nutrients from the peelings.  You can do either.


It's fast and yummy on a cool fall day (or any day.)  Add warm homemade whole wheat bread and you'll have a nice meal.


Mom's Yummy Potato Soup
POTATO SOUP:
8-10 potatoes, diced
3 stalks celery, chopped (with leaves)
1 onion, chopped
2-3 chicken bouillon cubes
1 can evaporated milk
1 c. milk (or half and half)
1 c. cheese (optional) (cheddar or other)

Cook first 4 ingredients in enough water to cover.  When soft, mash by hand or in blender to desired consistency.  Add milk.  Salt and pepper to taste.  Enjoy.

Yummy Homemade Bread
